Lourdes has received her inspiration for cheesemaking from her grandfather. The production of her cheese is one that stems from tradition: "When my great-grandfather's family came to America from Italy in 1908, they brought generations of cheese making tradition with them. Rooted in their history, they soon established dairy shops in the New York metropolitan area." "As a child, I was mesmerized by my grandfather's store, Fiore's of Hoboken. I would watch fresh mozzarella being carefully stretched, anticipating the moment when my grandfather's hand offered that first bite of freshly made cheese - that warm, buttery magic. An irrepressible memory was born."
